Organically grown at the Rovies estate on the island of Evia (one of the few groves in Greece still harvesting by hand), these organic Kalamata olives are hand-picked, hand-packed and cured on site, stored in brine subtly enhanced by extra virgin olive oil and white wine vinegar.
